To honor this Bingo Birthday, Blitzy loves to make blue velvet birthday cake. Just for kicks, you can even color each layer differently! Sometimes Blitzy goes all-in on the BB theme with layers of blue, orange, and green.
Blue Velvet Birthday Cake
Cake Ingredients:
½ cup softened unsalted butter (+ a bit extra for greasing pans)
1 ½ cups sugar
2 large, room temperature eggs
1 tbs white wine vinegar
2 tsp royal blue food coloring paste (or color of choice, see Tip below)
1 tsp pure vanilla extract
2 cups all-purpose flour
5 tbs cornstarch
2 tbs unsweetened cocoa powder
1 tsp salt
1 cup buttermilk
Marshmallow Frosting
1 jar (7 oz) marshmallow creme
1 cup softened butter
2 ½ cups powdered sugar
1/8 tsp salt
Instructions:
Preheat your oven to 325°F. Grease the bottoms and sides of three 8-inch round cake pans.
Beat cake ingredients in a big bowl using an electric mixer on low speed for 30 seconds, then on medium speed for 2 more minutes, occasionally scraping in the sides of the bowl.
Divide the batter evenly among your 3 pans and place in the oven. Bake for 20-25 minutes or until the top bounces back when touched lightly in the center. Let cool for 10-15 minutes before removing from pans to cool completely.
In a large microwavable bowl, soften marshmallow crème by microwaving on High for 15-20 seconds. Add butter and beat with an electric mixer on medium speed until smooth. Add powdered sugar and salt as you mix until smooth.
If needed, you can slice off the rounded tops of 2 cake layers to flatten them before layering. Frost your first cake top side down on serving plate, with about 1/3 cup frosting. Add your second cake, top side down, and spread with another 1/3 cup frosting. Finish with the untrimmed final cake layer, top side up. Frost the side and top of the cake with remaining frosting. Tip: Swirl in a toothpick of violet color paste to keep your blue from turning turquoise while baking
